Me to my husband: “Oooooh, babe!”
Him, helping me stay strong: “Keep it movin’.”
That scenario plays out every week without fail. I’ve been craving snack cakes for years. We never had Twinkies, Ho Hos, or Ding Dongs growing up and when I moved out I was always on a diet. Once I finally rejected diet culture and accepted my body I was already fully vegan. Twinkies were out of the question because they contain eggs and beef fat (*barf*).
I satiated my craving by creating this easy, last-minute recipe. The resulting cupcake-shaped “Twinkies” are fluffy and delicious.
- 1 Small bowl
- 1 Mixing bowl
- 1 Spoon
- 2 Cupcake pans
- Oil spray: I make my own.
- 1 Silicone spatula
- 1 Frosting tip: I used an open star shape.
- 1 Piping bag, gallon-sized Ziploc bag, or homemade parchment paper bag
